Gallo Blanco’s Lila 75 is a lightly spicy Spanish take on a French 75.

photo by Rob BallardNamed for the fragrant, citrus-sparked gin produced by Spain’s Wint & Lila distillery, the Lila 75 is a Spanish spin on the classic French 75, a WWI-era gin- and Champagne-based cocktail which, like the namesake 75 mm artillery gun, is capable of inflicting some serious damage. Still, this lovely, vanilla-flecked concoction will remind you more of grandma’s kitchen than the battlefield, thanks to its aromatic notes of clove and cinnamon. Infused into a house-made vanilla syrup, the warming spices lend subtle complexity to a cocktail that Gallo Blanco mixologist Tyka Chheng gilds with Cava (Spain’s answer to Champagne).

Here’s the ammo you’ll need: Combine 1 1/2 oz. Wint & Lila gin, 1 oz. lemon juice and 3/4 oz. cinnamon, clove and vanilla syrup* in a cocktail shaker with six or seven cubes of ice. Stir 28-30 times, strain the mixture into a coupe and top with Cava. Garnish with lemon peel and get ready for some heavy shelling.

*Combine 1 cup water, 1 cup sugar, one vanilla bean (seeds removed), one cinnamon stick and two whole cloves in a saucepan and bring to a simmer for 1-2 minutes until sugar is dissolved. Cool mixture in the fridge. Strain into an airtight container and keep refrigerated.
