Micah Olson – formerly with Jade Bar at the Sanctuary Resort for nine years – created this cocktail for MercBar in central Phoenix, where he started in June. He combines half an ounce of cognac, one-quarter ounce of Yellow Chartreuse, three-quarters ounce of fresh lemon juice, half an ounce of simple syrup, one ounce of chamomile tea and a dash of orange bitters. He shakes everything with ice, strains it into an ice-filled glass and garnishes with a lemon peel flower.

Yellow Chartreuse acts as “honey” for the chamomile, and lemon juice adds a touch of brightness, just as in the classic version. But we prefer this très bon adaptation with all of the extras.
